This fun twist on an egg fried in toast is a popular one at our house, especially this time of year when we have lots of homemade pico de gallo with goodies from the garden.
To make theses cut a hole into 3 corn tortillas (for each serving).
Heat butter on a griddle and put the stack of 3 tortillas on while it heats.
When the butter is sizzling crack an egg into the hole. When the egg is set up carefully flip the tortillas and egg.
For a “Fire in the Hole” variation, add a slice of jalapeno pepper before turning.
Serve with salsa and slice avocado or guacamole.
